With this route we propose the discovery of recipes and tipical dishes. Throughout the territory of the Colli Esini  e le Terre Gentili there are countless recipes. Among the first courses to be enjoyed, we recommend polenta, once considered poor dish, made with flour mays of Roccacontrada and “Vincisgrassi” tipical dish of the region, whit its laborious preparation. Alternatively are greedy dishes with red sauces with meat duck or wild boar  match with the Gnocchi or Pappardelle, which can be found in the restaurant and in agritursm in the contryside of Castelli di Jesi.
In the territory of Park, in Castellaro, takes place in the first week of August, the feast of “Rabbit in Porchetta” that follows the tradition of cooking of grandmothers. For dessert we propose the “Calcione” spread in the municipalities of  Serra San Quirico and Arcevia with its particular taste and bittersweet resulting from the combination of the intense flavor of the cheese and sugar. Do not miss the “lonziono di  Fico” reported by Slow Food that you get with a very old recipe that combines dried figs, almonds, star anise, pieces of cedar, sapa all wrapped in fig leaves.
